2018 Cabernet Sauvignon
Our 2018 Cabernet Sauvignon which we are releasing today is especially elegant and memorable. The grapes for all of our wines are grown at our Calistoga estate, and much of the work is done in the vineyard. First of all, our Calistoga location is well-known as perfectly suited to growing Cabernet grapes because of (i) gravelly soil; (ii) great sun exposure and (iii) intense variations in daily temperatures which thick-skinned grapes like Cabernet Sauvignon require in order to ripen properly. Rather than trying to produce as much volume as possible from the vineyard, during the growing season we make extra labor intensive passes among the grapevines dropping fruit in order for the energy of the plants to intensify within the Cabernet grapes remaining on the vines.
